Kapistoni Winery
Amid the hills of Kartli, in the heart of Georgia, lies Kapistoni Winery — a family heritage that has embodied the soul of Georgian winemaking for generations. This winery is not merely a producer but a living testament to craftsmanship, dedication, and respect for nature. What began as the passion of a grandfather, who named his most exceptional creations “Kapistoni,” has grown into a symbol of excellence. His vision — the pursuit of purity, quality, and harmony — continues to form the foundation upon which the winery stands today.
Georgia is recognized worldwide as the birthplace of the art of winemaking. More than eight millennia ago, the first grapes were fermented deep in the earth in clay vessels known as Qvevri. This centuries-old tradition, recognized by UNESCO as Intangible Cultural Heritage, lies at the heart of Kapistoni Winery. The winery is located in the Eco-Zone of Saguramo, within the historic Mtskheta region. Here, among the gentle hills and fertile soils of Kartli, indigenous Georgian grape varieties flourish — grapes found nowhere else in the world. The air is pure, the land untouched, and the harmony between humans and nature is palpable in everything the winery produces.

Vineyards
The Kartli region is renowned for its exceptional soil structure and unique microclimate. Here, in the valleys where the Mtkvari River winds its way through the landscape, the winery finds the perfect balance between sun, rain, and minerality. In these vineyards, ancient indigenous grape varieties such as Chinuri, Tavkveri, and Shavkapito thrive — grapes that form the foundation of Georgian identity. Each variety tells its own story: from fresh elegance to robust depth, from delicate aromas to earthy complexity.
The grapes are carefully hand-harvested in accordance with ecological principles that protect both the soil and biodiversity. This sustainable approach ensures that Kartli’s natural richness will be preserved for generations to come.
The Qvevri – The Silence of the Earth, the Voice of Tradition
The soul of Kapistoni Winery lies deep underground, where the Qvevri — traditional, handmade clay vessels — rest. Here unfolds a process that has remained unchanged for thousands of years. The earth provides a constant temperature and natural protection, allowing fermentation and maturation to take place in a way that fully expresses the pure character of the grape.
The Qvevri method is not a technology, but a philosophy — a belief in the rhythm of nature. Rather than exercising control, the winery places its trust in time, earth, and simplicity. Every drop reflects that natural harmony between humanity and the environment, between tradition and renewal.
Faithful to Authentic Georgian Winemaking
In an age where many producers embrace modern techniques, Kapistoni Winery deliberately chooses to remain faithful to the authentic Georgian method. The winery believes that true quality is not born from change, but from continuity.
The production process is based on minimal intervention — no excessive filtration, no artificial additives, no compromises. The result is a pure expression of terroir, where the character of the soil, the sun, and the climate remains tangible. Each creation is a living document of nature: honest, layered, and full of depth.
