In eastern Georgia, in the world-famous Kakheti wine region, lies the artisanal winery Dakishvili Wine Cellar – a family-owned estate where tradition, craftsmanship, and terroir come together.
Since its founding in 2002 by Giorgi Dakishvili, one of Georgia’s most respected oenologists, the winery has stood as a symbol of high-quality Georgian wine, made with passion, expertise, and respect for nature.

A Family with a Centuries-Old Winemaking Tradition

The Dakishvili family has been making wine for over a century. Their story begins in the 18th century, when their ancestors moved from the Argun Gorge in Chechnya to Georgia and settled in the Pankisi Gorge in northern Kakheti. There, at the beginning of the 20th century, Priest Simon Dakishvili planted the first vines of ancient, ungrafted Georgian grape varieties, producing wine for church ceremonies.

Today, the family continues this tradition, achieving a perfect balance between ancient Georgian methods and modern winemaking technology. For the Dakishvilis, winemaking is not merely a profession but a way of life – a calling passed down from generation to generation.

A Unique Location – The Terroir of Shalauri and Akhmeta

The wine cellar is located in the picturesque village of Shalauri, surrounded by mountains and forests, in one of the cleanest and purest areas of the Kakheti region. Dakishvili Family Vineyards owns ten hectares of vineyards in the protected designation of origin (PDO) areas of Tsinandali and Akhmeta – both renowned for their ideal winemaking conditions.

PDO Tsinandali has an exceptional soil profile of red and brown clay, silt, and sand with a limestone subsoil, producing elegant, mineral-rich wines with refined acidity.

PDO Akhmeta stands out for its basaltic soils and a unique microclimate with significant temperature differences between day and night – perfect for wines with pronounced fruit character and depth.

The proximity of the Caucasus Mountains and the Alazani River creates a natural balance of warmth, sunlight, and coolness, resulting in perfectly ripened grapes of exceptional quality.

What makes Dakishvili Wine Cellar special is the harmonious combination of traditional and modern winemaking techniques. The family produces wine in the classic Georgian way – in qvevris, large earthenware amphorae buried in the ground. This ancient method gives the wines their characteristic depth, structure, and amber glow.

In addition to traditional qvevri wines, the winery also produces modern wines using contemporary technology, focusing on freshness, elegance, and precision. Every detail – from grape selection to bottling – is personally overseen by the family, three of whom are professional oenologists.

Dakishvili Family Selection – Exclusive, Limited-Edition Wines

Each year, Dakishvili Wine Cellar produces only about 50,000 bottles, divided into small series of 500 to 5,000 bottles per wine.
Every bottle carries the Dakishvili Family Selection label, representing authenticity, quality, and craftsmanship.
