Wine Tsolikouri grape
Tsolikouri is one of the most esteemed white grape varieties from Georgia. This indigenous variety is renowned for its versatility, rich history, and unique flavor profile, and it forms an essential part of Georgian wine culture.
Origin and Distribution
The Tsolikouri grape originates from western Georgia, particularly from the historic region of Imereti, an area known for its rolling hills, fertile valleys, and mild, humid climate due to its proximity to the Black Sea. The combination of well-drained clay and marl soils, fresh mountain streams, and consistent rainfall makes Imereti ideally suited for cultivating this versatile white grape. Because of these perfect conditions, Tsolikouri is the most widely planted white grape in the region and forms the core of many local winemaking traditions.
Beyond Imereti, Tsolikouri is also grown in other western Georgian regions such as Lechkhumi, Guria, Samegrelo, and Adjara. In Lechkhumi, known for its steep hills and cool microclimates, Tsolikouri vineyards produce grapes particularly suited for semi-sweet and fresh wines, including the PDO wines from the Tvishi micro-region. In Guria and Samegrelo, near the Black Sea coast, vineyards are often planted on hillsides and terraces, where Tsolikouri benefits from humid summers and cool nights, contributing to balanced acidity and aromatic complexity.
In Adjara, where the grapes grow along coastal areas and in lower valleys, Tsolikouri demonstrates resilience to humid conditions and heavy rainfall. Here, vineyards are often combined with other local varieties, resulting in blends that retain the characteristic freshness of western Georgian wines.

Characteristics of the Tsolikouri Grape
Tsolikouri is a medium-sized grape with a conical cluster shape, often featuring “wings.” The berries are round and yellow-green in color, with a relatively thick skin that contributes to the versatile wine styles that can be produced from it. This grape is late-ripening, typically between late September and mid-October, and is known for its good resistance to fungal diseases, although it is sensitive to frost.
The grape grows best on well-drained clay and marl slopes, but it can also adapt to a variety of soil types, which contributes to the diversity of flavor profiles in the wines.
Wine Styles and Flavor Profile
One of Tsolikouri’s greatest strengths is its versatility. This grape can be used for a wide range of wine styles:
Dry White Wines: fresh, with medium to full body and a crisp acidity.
Recommended Pairings:
- Seafood: grilled fish, shrimp, scallops, or mussels.
- White Meats: chicken or turkey with light herbs, such as thyme or lemon.
- Vegetarian: grilled vegetables, salad with citrus dressing, or soft cheeses like feta or young goat cheese.
- Georgian Dishes: for example, Imeretian cheese pies (Khachapuri Imeruli) and light vegetable dishes.
Semi-Sweet Wines: popular in the Tvishi region (PDO), with an elegant balance of sweetness and acidity.
Recommended Pairings:
- Spicy Dishes: lightly spiced Asian or Georgian cuisine (e.g., with coriander, chili, or ginger).
- Desserts: fruity desserts such as pear tart, melon salad, or baked apples with cinnamon.
- Cheeses: creamy cheeses like brie or camembert, which pair well with the sweet-sour profile.
Amber Wines: traditional Georgian style with skin contact and extended maceration, resulting in notes of hazelnut, dried fruit, and honey.
Recommended Pairings:
- Grilled Meats: chicken, duck, or pork with herbs.
- Hearty Vegetables: pumpkin, mushrooms, roasted carrots, or roasted peppers.
- Fermented Dishes: such as kimchi or sauerkraut, which enhance the umami in the wine.
Sparkling Wines: thanks to its high natural acidity and stable foam, ideal for sparkling wines.
Recommended Pairings:
- Oysters, mussels, and other shellfish: the fresh bubbles cut through the brininess of seafood.
- Sushi and Sashimi: the effervescence refreshes the palate and highlights delicate fish aromas.
- Carpaccio or Ceviche: light acidity in the wine enhances the fresh flavors of citrus-marinated fish or meat.
