Following fermentation, the wine undergoes a six-month aging process on skin. Ocho Rkatsiteli Mtsvane showcases a balanced alcohol percentage of 13,5%, meticulously crafted to complement its rich and nuanced flavor profile.

Winery

Founded in 2014 by renowned vintners Giorgi Tsirghvava and Mamuka Tsiklauri, the DoReMi Wine Cellar stands as a tribute to Georgia’s rich winemaking legacy. Committed to organic practices, they meticulously select grapes from vineyards spread across the diverse landscapes of Kakheti, Kartli, and Imereti.

At DoReMi, tradition is paramount, with each wine crafted meticulously using the ancient kvevri winemaking method. These large clay vessels, nestled in the cellar, are the heart of their winemaking process. No additives are introduced, and there’s no interference in filtration or clarification, save for a minimal addition of sulfites. It’s worth noting that each region in Georgia has its own unique customs for producing natural wines in a kvevri. For instance, in Kakheti, it’s common to ferment grapes in a kvevri along with the skins, and sometimes even the ripe stems. Conversely, in the eastern Kartli region, winemakers often choose to use only a portion of the grape skins and avoid fermenting the stems entirely.
