They are then carefully destemmed and crushed, after which the fermentation process takes place in stainless steel vats at a controlled temperature between 23 and 28°C. By selecting specific yeast strains, the natural aromas of the grapes are optimally preserved. Traditional techniques such as délestage and remontage are applied during winemaking, where the skins are regularly submerged and pumped over to achieve a deep and complex flavor. After a maceration period of 5 to 7 days, fermentation is slowed down through cooling once the desired residual sugar level is reached. This helps retain the wine’s natural sweetness and lively freshness. The wine is then stored at a low temperature of 0°C until it is bottled, contributing to its elegant and crisp character. The philosophy of Telavi is rooted in local tradition, with an emphasis on using indigenous grape varieties that reflect the unique terroir of the region.
