Established in 2014 by esteemed winemakers Giorgi Tsirghvava and Mamuka Tsiklauri, the DoReMi Wine Cellar pays homage to Georgia’s illustrious winemaking heritage. With an unwavering commitment to organic practices, they meticulously source grapes from vineyards scattered across the diverse landscapes of Kakheti, Kartli, and Imereti.
At DoReMi, tradition reigns supreme, with all wines crafted meticulously using the ancient kvevri winemaking method. These large clay vessels, nestled in the cellar, form the essence of their winemaking process. No additives are incorporated, and there’s no intervention in filtration or clarification, except for a minimal addition of sulfites. It’s noteworthy that each Georgian region has its own distinctive customs for producing natural wines in a kvevri. For instance, in Kakheti it is customary to ferment grapes in a kvevri along with the skins, sometimes even including the ripe stems. Conversely, in the eastern Kartli region, winemakers often opt to use only a fraction of the grape skins and avoid fermenting the stems altogether.
