Kapistoni Winery, located in the beautiful Georgian province of Kartli, near the bustling capital city of Tbilisi, is a young and dynamic winery that excels in creating unique natural wines. This winery is the life’s work of Niko Chochishvili, who returned to Georgia in 2010 after a stay in the United States. What began as a side job quickly grew into Niko’s true calling: making pure, authentic wines. Since his return, Niko Chochishvili has pursued his passion for winemaking with full dedication. In 2017, he established a traditional wine cellar, marking the beginning of his complete commitment to the craft of winemaking. With deep respect for nature and ancient Georgian winemaking traditions, he produces natural wines that are clean and pure. Kapistoni Winery uses qvevri, ancient earthenware vessels buried in the ground, to authentically ferment and age the wines. A perfect example of this is the Kapistoni Shavkapito Qvevri. This wine is one of Niko’s masterpieces, showcasing the purity and complexity that characterize his natural wines.
