In 2017, he established a traditional wine cellar, marking the beginning of his complete commitment to the craft of winemaking. With deep respect for nature and ancient Georgian winemaking traditions, he produces natural wines that are clean and pure. Kapistoni Winery uses qvevri, ancient earthenware vessels buried in the ground, to authentically ferment and age the wines. A perfect example of this is the Kapistoni Shavkapito Qvevri.
