The DoReMi Wine Cellar is the joint project of two talented winemakers, Giorgi Tsirghvava and Mamuka Tsiklauri. Since 2014, they have been harvesting organically grown grapes from vineyards located in different regions of Georgia: Kakheti, Kartli, and Imereti. At DoReMi, all wines are crafted using a traditional winemaking method called qvevri. These are large earthenware pots buried in the cellar. DoReMi wines stand out as they do not add any additives, refrain from filtration and clarification, and use minimal amounts of sulfites. Each Georgian province has its own unique traditions for making natural wines in qvevri. For instance, in Kakheti, it is customary to ferment the grapes along with the skins and even the ripe stems inside the qvevri. In the eastern region of Kartli, winemakers ferment only a portion of the skins and exclude the stems. Giorgi and Mamuka follow these time-honored traditions. They create all their wines in their own qvevri cellar, located approximately 70 kilometers from the capital city of Tbilisi. DoReMi offers a wide variety of wines made from grape varietals such as Mtsvane, Saperavi, Rkatsiteli, Kisi, Chinuri, and Tavkveri. These wines are highly authentic, unrefined, and often cater to the experienced wine enthusiast. However, they always exhibit cleanliness and exceptional purity.
