Gašper Bonita 2021

If you’re looking for a refined and characterful red wine, the Slovenian Gašper Bonita is an excellent choice. This premium wine comes from the picturesque Goriške Brda region, located in the western part of Slovenia, near the Italian border. Goriške Brda is known for its unique microclimate, created by the harmonious combination of warm sea air and cold winds from the Alps. This provides ideal conditions for growing grapes, resulting in wines of exceptional quality, such as Gašper Bonita. Gašper Bonita is an elegant red blend of three carefully selected grape varieties: 54% Merlot, 36% Pokalca, and 10% Cabernet Sauvignon. This harmonious mix offers a beautiful balance between refinement, power, and fruitiness. Merlot contributes to the wine’s smoothness and elegance, with silky tannins and a rounded mouthfeel. Pokalca, a native Slovenian grape variety, adds a unique spiciness and fruitiness, giving the wine its distinctive character. Cabernet Sauvignon forms the powerful foundation of the wine, with deep flavors and a robust structure.

The grapes are hand-harvested, which benefits the quality of the harvest. After the harvest, the wine undergoes a controlled fermentation in stainless steel vats at a temperature of 24-26°C, lasting five days. It is then aged in large 600-liter oak barrels, which ensures a smooth, harmonious flavor development without the tannins becoming too dominant. This process makes the wine accessible to a wide audience, while maintaining depth and complexity. With an alcohol content of 12.5% vol., Gašper Bonita is a perfectly balanced wine: both powerful and elegant, without the alcohol overshadowing the delicate flavors.

Discover this Slovenian gem today and experience why wines from Goriške Brda are gaining increasing admiration worldwide.

Flavor character Gašper Bonita

The Gašper Bonita has a deep, ruby red color that reflects its rich flavor profile. The aroma is a refined blend of ripe fruits, such as berries and cherries, with a subtle spiciness that is characteristic of the Pokalca grape. When tasting this wine, one is enveloped by a beautiful balance between the soft, fruity notes of Merlot and the powerful, robust flavors of Cabernet Sauvignon. The taste is full, round, and elegant, with a long finish that perfectly reflects the unique characteristics of the region and grape varieties.

The Gašper Bonita is a versatile wine that pairs wonderfully with a variety of dishes. Thanks to the perfect balance between power and elegance, this wine is an ideal companion for grilled meats, cheeses, pizza and pasta, and barbecues. For the optimal experience, it is recommended to serve the Gašper Bonita at a temperature of 16-18 degrees Celsius, so that the aromas and flavors are fully expressed. This wine is best enjoyed young but also has the potential to age for several years, during which the flavors will further develop and deepen.

Description

Producer

Gašper Čarman, the owner of Gasper Wines, is one of the most prominent wine experts in Slovenia. He won the title of Best Sommelier of Slovenia twice (2013 and 2015), achieved the prestigious WSET Level 4 diploma, and is currently in his second year of the renowned Master of Wine program. For him, learning is a continuous process; even after 14 years in the wine world, he remains fascinated by new discoveries. From a young age, Gašper was surrounded by wine and gastronomy. Growing up in the family business – the restaurant Danilo – gostilna & vinoteka in Reteče – he developed his passion for wine. In 2004, he took his first steps as an independent entrepreneur in wine sales. What started as a small garage business quickly grew into a successful online wine shop and a flourishing distribution network for both private and business clients.

In 2013, he launched his own wine brand: Gasper Wines. For Gašper, wine is about the experience in the glass, more than the story behind it. A first impression can lead to a long-lasting relationship with a wine or just a fleeting encounter. This idea was central to the creation of Gasper Wines. The wines are produced in collaboration with Klet Goriška Brda, one of the largest Slovenian wine cooperatives. Thanks to this partnership, the recognition of Gasper Wines continues to grow, both in Slovenia and internationally. Gasper Wines embody the character of the unique terroir of Goriška Brda and are designed with the wine lover in mind.
