The grape harvest takes place in mid-September and is done entirely by hand, emphasizing the care and attention invested in each bottle. After the manual harvest, the grapes are gently pressed using a membrane press and inert gas. Alcoholic fermentation occurs in stainless steel tanks at a controlled temperature between 14°C and 16°C for two weeks.
